Cool - that's amazing. Whenever I try to make things like custard it always lumps. Maybe it's because it's boiling water rather than something thicker like milk.

Not come across this method, but it sounds like if you're adding it to the flour it would need to be done very slowly to prevent lumps. Maybe mix a little with the flour to make a paste and then slowly add-in the rest.
