Actually Tongariro looks like only a little over 2 hours away — if your family is up for a challenging day hike I would definitely go there, it's one of the Great Walks in New Zealand

Omg my back yard!!! +1 to Waitomo Caves, Hot water beach in the Coromandel is lovely but it's like 3 hours driving from Rotorua, so that might be too much. In general you'll mostly encounter teeny tiny towns around that area so best to hit up the nature
