Maybe just one expanding collider and then some extra logic checking distance that ignores collisions that are within the hole of the donut.

Yep!
I've had to do some thinking about the fact that my protagonist is essentially complicit in that sort of system.
I have a little twist in the game planned that should help square that circle.
