On the other hand, I also have all these ideas/scenes throughout my notes for different types of books- completely out of my comfort zone as far as I have only written scientific papers for school, never fiction/a book/dialogue/entire universe etc.

I’m honestly not sure. I just don’t know where or how to begin. My grad school thesis is pretty much ready to go and I had a professor suggest submitting it at the time (2021). It’s on some really heavy stuff, so I legitimately haven’t been ready to re-read it since. I’m feeling ready now though
