Castiel met Dean when he was at his worst. He likely saw Dean torturing someone, or saw the after effects at least. Still, when he saw Dean he saw his heart and loved him. He knew Dean was far more than what the pain and trauma had made him. That faith helped Dean heal. A truly beautiful love story.
