It can be hard to find good tequila. Supermarkets usually only stock mixtos tequila, which is only 51% made from agave the rest being cheap grain liquor. Look for "100% blue agave" tequila. Good brands include: Cabrito, Centenario, AquaRiva, Herradura, El Jimador, Tapatio & 1800 Cuervo.

Unlike other liquors, where the more aging the better the drink, in Mexico, unaged tequila is considered the best. Blanco (or silver) tequila, as the name suggests, is clear, whereas reposado has some colour. The default to use in cocktails is blanco - unless reposado is specifically called for.

If you are making drinks with lemon juice and also want lemon peel for twists, peel the lemon before you cut and squeeze it. The removed strips of peel can be kept in an airtight container for up to a day and still be usable.

Cut fruit can be stored in the fridge in an airtight container for a day or two, or squeeze the juice into an ice tray and make fruit ice cubes. Uncut fruit will last longer in the fridge, but if you want to use the peel for twists you will get less oil from a lemon that has been in the fridge.

MODIFIER: CITRUS JUICE A key ingredient in sour cocktails is citrus juice. Use freshly squeezed juice. Lemon & lime juice in plastic bottles is an ok emergency backup. Once a citrus fruit is cut it starts to react with the air and should be used asap or it will spoil any drink it is used in.
