Made some sourdough tangzhong (Chinese water roux) bread. Make a levain, cook some flour in some water til the flour gelatinizes, mix w/ rest of dough. Good way to make a tender crumb loaf that stays soft without a lot of dairy and egg (handy trick since grocery prices haven't magically dropped)
