Cooked the Dishoom chicken ruby last night. It’s a bit of a faff but my goodness it’s worth the effort. Recipe’s online. (Kasoori methi is dried fenugreek leaves. Most Asian & Middle Eastern grocers stock it.) My Xmas presents from Ren’s Pantry were put to good use.

Have you discovered the Curries by Bumbi channel on YouTube? She has an amazing range of recipes, and very single one I’ve made has been delicious (some are also a bit of a faff, but definitely worth it).
Methi is fenugreek leaves? That explains why my lamb methi wasn't as hot as the lamb chilli methi I'd had before. Good to know, thank you!
