I got a math minor with my undergrad and I was a whiz at calculus and multivariable calculus, but every time I’ve tried to learn statistics it has bounced off of my brain

What ended up working for me was a combination of taking some data science courses that had a hands-on approach to developing statistical literacy through doing applied projects and reading books and papers about how people lie/misinform/bullshit with statistics
The other key thing imo is that one has to actually use math on an ongoing basis or those skills atrophy. I’ve very rarely had to use the math I learned in my undergrad over my 20 year career and I ended up losing quite a lot of it.
