The steam will ensure a moist and juicy cook. Now I'm waiting on the bread primary rise; it gets divided up into loaves for the final rise in around half an hour. Perfect time to finish my physical therapy exercises.

The ribs have finished the smoking part of the cook and are now wrapped in aluminum foil tents filled with real apple juice (not flavored grape juice) to steam for another 2 hours of low and slow cooking:

Got the ribs on the grill awhile ago and I am working on the bread; I added a little more water than I meant to and so it's taking longer to get the gluten I need but I think one more pull is needed.

The poolish has been combined with the rest of the flour, water, and yeast along with the salt (not split between the two) into a lumpy oatmeal looking dough. This will rest for 15 minutes before I pull it and then another 15 minutes before I pull it again and we develop the gluten:
