Why does everyone pitch Daggerheart as being "from the team behind Critical Role"? As far as I can tell, Matt's the only one in the credits, and not even as a lead designer.

I thought the same way, but after a decade of that mentality I've enjoyed lightening the load a little bit with more fiction first games. Fabula Ultima is a nice middle ground, I find. It's nowhere near as crunchy as Pathfinder, but it's not exactly bare bones either.

In my experience, players want a little bit of hand holding, at the very least a big sign that says "the plot is over here". What players really care about is agency to affect the world, like you say.

There's some caveats to this. If you're playing a prewritten module for games like dnd or pathfinder, a certain level of player buy in is expected and polite.

There's a lot of communities online for finding groups! Consider joining some ttrpg Discord servers. Especially for DnD, there's dozens of groups looking for players every day!
