The problem I find is that by adding such a mode it often influences other design choices and leads to developers making changes that harm the core experience. Not to mention I don't think Dark Souls would have been nearly as successful if there was an easy mode.

In fact, I think Dark Souls, or rather Elden Ring is a great example of accessibility done right, by adding in spirits and allowing summons it gives players the ability to decide how hard or easy they want the game to be for them without taking away the core philosophy or rock hard difficulty.

I understand where you're coming from, but I think if a game designed to be challenging has an easy mode it can damage the quality of the game, like in Dark Souls if everything died in a couple hits and hit like a feather duster it would be extremely boring.

Doesn't need an easy mode to be good either, not all games are for all people and that's okay.
