I have, evidently, discovered that there is an upper limit to the number of M&M's you can eat and it is, again supported by evidence, more than the number you should eat.

Have you factored time into the equation? If X is the maximum number, then what effects do you get when X is spread out over T (defined as previous time to eat)+t?
Jelly Belly beans have a similar result IME. Getting free and relatively unlimited ones at a prior job office was bad news until I ate enough that I never wanted to even see them again.
I have discovered that drinking chocolate milk after consuming too many M&Ms will cure you of this ailment. You want to make sure that the amount of chocolate milk isn’t too much though, for infinite loop reasons.
