Why May? if it's cold weather as an issue, I can give you a ton of veggies you can plant in cold weather. If it's a dry season issue, I can give you lists of low water plants. You can pretty much plant a garden year round, you just need to rotate the plants so you don't strip too many minerals out

Snow peas, spinach, carrots, onions, garlic, kale, broccoli, cauliflower, beets...... um.... really your root veggies and hearty peas (if it's under freezing and damp, toss a sheet over the plants and you're fine) under freezing will be fine with these plants, they're hearty.

Yes. I did two gallons of eggs in June and they were nice in December, no noticeable difference. Don't think it works with store eggs, though. You'd need to dehydrate.
