I think that what often gets overlooked in the AI-ification of education is that by and large students don't even want it. My students say it diminishes connection with their work. They liken it to an addiction. AI in ed has never been about improving learning or making better students.

I have a whole Critical AI syllabus I could send you! I found the most effective way to argue against AI is by platforming humans. In one class, we read poems and extracts of stories together. Listened to Toni Morrison read The Bluest Eye. Talked about voice and meaning. It was wonderful.🥹

At my institution, I'm an outlier. Policy is being developed to integrate AI across courses. I guess this will turn into another artificial "opt out" situation if one actually does not want to use it (admin just expects everyone will). Sorry, not relevant to your cause. I just feel desperate.😭

I give my students a handout: "A Brief Account of the AI Industry and Generative AI: Reasons Not to Use Chatbots"; reasons range from how they impede leaning and are designed to get things wrong to environmental costs to security etc. with links to the research/studies.
