I'm going on a work trip to China and returning via a 9 day holiday trip to Mongolia at the start of May. Anyone been there? Any insights on things to do?

Khuvsgul lake or the Gobi are both popular tours (possible to do both in 9 days, but it'd be a *lot* of driving). If you're looking for something more relaxed Terelj national park is just 2hrs from UB. Great for hiking and horseriding, and the big Chinggis Khan statue is right next door.
A trip to Elsen Tasarkhai is also worthwhile. It's a desert area about 180 miles west of UB known as 'Mini Gobi' with big sand dunes and camel rides. Great for camping, and only 50 miles from the old capital of Kharkorin. You could fit Terelj and Mini Gobi into a 9 day trip no problem.
No probs :) P.S. If you're looking for a tour company I'd recommend Meg Mongolia. I may be a little biased as Meg has been a friend of mine for many years, but she's a good egg. Hope you have a great trip :)
And I've read your book! One of them - This is the Way the World Ends, I bought it on kindle in 2017 so long enough ago to read again but I think I'll start on Last Man Standing, Book 1, fab :)
Thank you lots of lovely trips there to think about, now I wish I had longer! I've been looking at various tour companies but always a gamble so a personal recommendation is fab, thanks!
