It needs to be St. Augur crème to be authentic. And then you don’t need to cook. Just add to the sprouts. Chestnuts are optional but very much to be encouraged, lardons/pancetta a must. I write as the author of the recipe.
I don't use the oven. I'll steam the sprouts and then reheat them in a pan when required with lardons or butter and then throw in the cheese to melt just before serving.
I have one at Christmas dinner because it's traditional fare, but chomp it quickly and chase it away. Horrid things! They are entirely avoidable till then.
