If it in the scenario all the problems with bureaucracy are fixed I'd go back to work in a hospital as a nurse. Otherwise likely Scuba instructor (independent 'cause you know how dive centers are).
I know a guy who went all the way into becoming a pediatric psychiatrist and left the NHS to teach English in the south of Italy. The system is messed up.
They handled it like wee troopers, had a specialized pet relocation company do the travel for them and got little digital postcards with their photos along the way ♥️

I actually almost accepted a job as an apprentice press tog when I was 16, Magazine work for an Engineering publication, old school film camera and developing. Roads not travelled.
There are so many little situations like this, aren't they? I was late in my application for an internship as a forensic psychologist, so I took a marketing job while I waited for the internship to re-open. Now here we are!
I want to run a nice community centre with an awesome cafe/restaurant - that can also have cooking classes or volunteer work for retirees for community nights.
I'd have events to help battle loneliness for the elderly, disabled, parents and ND folk in my community.
I'd probably be creating devices for disabled people (prostheses, modifying wheelchairs, etc). Would be a marvelous reason to dust off my engineer's diploma.
