I think a regular favorite is yogurt marinated chicken (any recipe works) with some kind of savory rice.

Chop 1 pack grape tomatoes & an eggplant. Toss in olive oil w/ 2-3 cloves garlic, s&p, pepper flakes. Roast @ 425 abt 20-25 minutes until caramelized. Pulse puree. Toss in pasta of choice. Sprinkle in nuts & herb (I like pistachio & mint for this)
Add your favorite tomato sauce (Rao’s) and simmer until veggies are tender-soft. serve over pasta.
