Of the classics, I'mma be basic and say Black Flag. Tailing missions aside, it was very good.
But my all time fav is Odyssey. What can I say?
I've never minded the increased emphasis on fantastical elements either.
So I'd have to say that was my favorite. I enjoyed the hell out of that game.
Ubisoft nailed the pirate fantasy in Black Flag, and their recreation of Ancient Egypt was gorgeous in Origins, with fantastic leads.
The sweet ass voice of Matt Ryan is amazing, the sea shanties I never tire of, and slow sailing of the sea is so wonderful. It's part of my summer-game to play every year along with Subnautica and re-watching SeaQuest DSV.
That and I'm a pyrate.

I still replay it once in a while for the mood

Character Progression: Ezio; Game World: Odyssey; Parkour: (Fixed) Unity... Black Flag gets a special mention cause Pirates at the height of Pirates on the Big Screen

Pre-Origins, AC Revelations had my favorite story, Black Flag was my favorite gameplay-wise. Of the recent releases, I'd say Odyssey.
