In my opinion it used to be way worse and I think its partly perception. MS used to actually put out daily updates before attempting to switch to the patch Tuesday scheme and w/e they're doing now, but in the past we also didn't use our PCs everyday and rarely put them to sleep so they'd update and

finish when we shut them down that day. These days where we need instant access to everything it feels like updates are always lingering. There is rumors that they're attempting to move to a live update model where restarts are no longer required for most major updates.

11 doesn't let you fully turn them off, just stall them. It breaks my drawing tablet if I make it wait too long. Then it breaks my drawing programs after updating.

Linux is free. Also updates run in the background and most updates do not require a reboot.

My favorite flavor is Fedora Workstation.

Linux is free and runs well on old hardware. Pick up a 3rd gen i7 for $50 and it'll run the current version of any linux distribution better than an 8th or 9th gen running Windows for most general tasks. Totally worth it if you're not gaming.

Older macs are kinda cheap (less so than old PCs) and can be easily modded to run the current MacOS until Apple kills off support for Intel processors. I'm running a 2013 Mac Pro and 2012 Macbook Pro like that. No hostility or snark intended, just saying you have more options than you think.
