The demo of Herdling is really adorable and gentle, herding these big fluffy friends out of the city and into the hills, though the trailer for the full game looks more intense and worrying.
Three that really stuck out to me;
Dead As Disco - a hype as hell rhythm beat 'em up with a banger OST.
Grapple Car - a time trial driving game all about speed and using a grappling hook to launch round the track.
Jetrunners - Another speed game, test your skills and the character banter is solid.
Winter Burrow: cosy winter survival
Wander Stars: very anime fighting with words
Hirogami: origami-based adventure
Downhill: fourth wall-breaking MC knows she's being controlled and has opinions about that
Constance: very artsy Metroidvania
Love in Tiny Spaces: stealth dating in Singapore
Roach Post! I think the balancing might be a little off (one particular uncommon roach can carry a whole run) but the foundation is a fun puzzler with slay the spire progression!
It has a MGS style vibe with its PSX aesthetics. Game plays as an action platformer with a hint of metroidvania. Controls are pretty tight. Definitely worth a try, it's a big demo, may take a few hours.
I have not messed with a Telltale game in years. Reading about Dispatch, one you either shared or retweeted put it on my radar! Played the very short demo and was amused very quickly!
Had to look up the studio because the conversation style reminded me of Telltale. l had to look up AdHoc and apparently they are folks that came from Telltale. The trailer at the end of the demo makes that point as well.
Absolum is also a day-one buy from me. I do love beat-em-ups, and with the rogue-like elements, multiple paths, and fun little side things to do (like help with a heist), I played the demo for 3 hours and didn't get through everything.
And it's from some of the Streets of Rage 4 devs. Cool stuff.
Deadly days road trip scratched a bunch of itches at once, Shroom and Gloom really hits something for the card game enthusiast in me, Morsel feels like a cool spiritual sequel to Atomicrops. Out of nowhere there's this card one called "My Card Is Better Than Your Card" that was great!
I really enjoyed The Lonesome Guild. It was the only demo I tried that made me wish I could play more for days after, instead of my usual "that was fun I'll have to keep an eye out when it releases."
I also quite liked dead as disco. Playing the endless mode made me go like "ok this is neat" then I played the mostly-finished campaign level for maniac and that shit blew me tf away (helps I already love that song)

Dead as Disco is the one I'm most looking forward to. Batman Arkham combat game set to rhythm and great style. Hoping the final game lives up to it.
