The correct answer is yes to consomé, btw. And the follow-up question is: how do you get the most out of birria consomé, do you dip the taco in it or sip it like a salty, heavenly au jus? The answer to this set of questions is: yes.

Having recently had fish taco’s at my grandmother’s retirement community cafeteria, I beg to differ. It doesn’t matter how fresh the ingredients are if they didn’t have any flavor (or color) to start with.
Been to SD *many* times but somehow never had the pleasure of enjoying birria ramen, and now I feel like I need to have an honest conversation with some close friends and family about sharing culinary joy 😅
For me, I put 3-4 or tacos dorados in a basket sprinkle cilantro, cebolla everywhere, add all the chile salsas available at the stand (macho, árbol, verde, etc) on top, the consommé is then added to slightly submerge all but each corner of the row of tacos for holding while scooping stuff
