Yes, the recipe seems weird, but it is SO GOOD.
It's not Thanksgiving without turkey, but it doesn't need to be only turkey.

But I see it's what you call baking powder!
I don't want to give it more time as I have already been cooking it for about 7 or 8 hours!
Cream of tartar is a COMPONENT of baking powder, but it's commonly used in cooking - particularly baking, but all sorts of cooking, for many reasons.
It can used as a thickening agent if what you're cooking doesn't need to be VERY thick - like a curry.
You COULD use cornstarch, which is a more commonly used thickening agent, but if you don't need your curry to be much more thick, I'd go with the cream of tartar.
Cornstarch can lump up if you're not careful.
Start with a teaspoon. Stir it in. See how that does.
Add another teaspoon if it isn't thick enough.
You really shouldn't need much more than that, unless you've made a liquidy mess of it.
If that's the case, then use cornstarch.
