In Toronto, due to regulations limiting floor plate size + shape, also market forces, all the new builds have awkwardly deep units. One of the reasons why "bring back the slab" is a slogan among local YIMBYs.

Another weird issue is that there are often style guides and committees that try to do stuff like "break up massing" that results in the buildings looking like a complete mess.

Add that to the exploding costs, and people stop hiring architects

Must say that one exception is if you like to cook. In that case, they tend to suck. They are good for ppl who get food from somewhere between UberEats and Huel.

Why would older apartments be better for cooking? Older apartments are more likely to have worse kitchen ventilation, no dishwasher, less cabinet space, etc.

Every new-build apartment or townhome I’ve lived in in the U.S. or Canada has had ample cooking space, a spacious fridge/freezer, a dishwasher, decent cabinet space, and all new appliances. And my first one was a 400 sqft urban 1 bedroom, barely larger than a studio.

The majority of these new buildings don't have the same dedicated kitchen spaces that most older stock comes with. Most have "open plan" kitchens with an island which means you lose all the upper cabinet space.

New buildings would have better mechanical ventilation, but usually these new buildings also have deep floorplates the kitchens are not near the limited windows. (picture above illustrates that too.)

I cook all the time in a similar kitchen and it's perfectly fine, it's bigger and better than most kitchens I've had in older buildings.
