Fat is not the enemy. Dr Ancel Keyes lied about his research data re: saturated fat CAUSING heart disease. A UK doc know that it was the inflammatory aspect of sugars, but Keyes was a horrible bully, and disparaged that doc, and the sugar industry paid off Harvard to lie about sugar.

The USDA (over crops and livestock, making human diet goals) Pyramid practically guarantees obesity and diabetes. BUT, I think it was calculated to enhance Big Pharma with meds for all of the complications of eating high carbs. Back in the 50s-70s, sat fat @ every meal was the norm-w/thinner people.
I am utterly sick of shelves full of low fat dairy products. It is so often no longer a matter of choice - low or high fat - but Hobson's low fat or nothing.

Thinking about making my own butter as 500g of spreadable reaching not far short of a fiver unless I can get to Lidl or Aldi. I have been watching the price of butter soar since Brexit not sure why as it uses British milk. Price of bread flour if you can find it going up too and that is British too.
I make my own yogurt. Admittedly I buy a large carton of active live yogurt which I freeze into small portions to use as a starter but it saves me having to carry the bought stuff home from the shops as I eat quite a lot of it and don't drive.
Little misguided. What you’re calling full fat is typically called whole milk. Skim milk, 2%, and 1% milk are just as healthy - simply less cream. I’m still not too sure about ultrafiltration but pasteurized milk made dairy a consistently safe food. Butter is great, but pricey and margarine is fine.
