Thanks for all the responses. I think my real issue is fundamentally I'm just very attached to cooking with fire. I don't mind that it's hard to clean. I'll happily trade that for feeling in control of the heat, for the source of it be clearly palpable. - ThreadSky

I'm about to ask an extremely boring domestic middle-class-coded question - anyone got any experience cooking with an induction hob? Is it substantially better than an electric ceramic in terms of heat responsiveness? Is it a pain in the hoop not being able to use some kitchenware? Thoughts please!

I like things to feel tangible. I suppose that's old fashioned. I miss sash windows you can fling open, landline phones you can properly hang up. I like my living environment to be a tactile physical space and not something shiny and flat that goes beep beep boop

same. not that i have very much say in what type of stove is in a rented flat, but i ditched my automatic coffee maker for a stovetop moka pot for exactly this reason. the physical process of using it is very pleasant.

These thoughts brought to you from seeing an induction cooker that promises wifi connectivity. I don't want wifi connectivity. I want a flame, and metal. Might just start cooking everything on the bbq. Become some kind of insane paleo diet meat influencer.

I just saw this. Induction is as close to gas as you can get from an electric in terms of responsiveness.

This is exactly my opinion. I am 100% convinced I would prefer induction cooking with no perceptible downsides but I just don't want it. Perhaps its stubborn. Perhaps I resent getting pushed upgrades to aspects of my life that are fine, while everything else gets worse?

and on the 'control of heat' thing - IMO induction is a clear winner there too. Most go from 1 to 9 or 10, and some make .5 steps between each number, and there are distinct differences in each one that allows you fine tune the exact heat your pan is getting in a way that gas just doesn't.

This is the key point for me, not all induction hobs are created equal. If you can, go fiddle with the controller for one before you buy, because one that's just 1-10 with no additions, feels unpleasant. One that's got more fine tuning is a great compromise to get away from gas

This reminded me - I have a Neff one with a removable magnetic control ring and having an actual tactile way to control all the zones is so good - miles better than a touch interface.

I'm back to cooking with gas after a year of an induction hob and I'm very pleased about it. More heat control, much more pleasant to cook with
