The only hard parts about polenta are a) making sure I have the wrist strength to whisk enough and b) the regret when I forget how much cheese is going into this dish
Instant polenta is a joy now, but it’s only been around for a couple decades, so we still carry the cultural memory of stirring a hot pot for over an hour.
Also, Italian style we cook it longer & make it so thick it cools as a brick.
