While I've got Apple TV (yuck) for Severance purposes, what else should I prioritise watching? Silo and Bad Sisters are top of my list. I'm also considering: Shrinking, For All Mankind, Dark Matter, Foundation.

It's almost relentless cheery & feelgood. I prefer some darkness in my TV. It's fine, it's mindless junk food, I don't really understand why people love it so much. Possibly they were just excited to have a famous American taking an interest in British things.
Adding to people saying Slow Horses! Shrinking, Dark Matter, and For All Mankind are also all excellent and definitely worth watching while you have it.
Slow Horses is very good and I loved Ted Lasso. Calls is really interesting and creepy AF, audio only so it’s almost a podcast but has some visuals that contribute to the vibe.
Monarch: Legacy of Monsters is better than it has any right to be. (Didn’t think much of Dark Matter). Foundation is good (good companion podcast too). Slow Horses is ace
Everyone’s recommending TV shows so I will say CODA. Won Best Picture at the Oscars a few years ago and is a wonderful heartwarming film that I regularly go back to.
Tbh I’ve been a little underwhelmed with Dark Matter, although I’d still consider it worth the watch. It’s an interesting premise, but the execution of it goes in a different direction than I’d hoped.
If you’re into thrillers, Slow Horses should be high on your list—great mix of espionage and dark humour. Have you watched Ted Lasso yet? It’s a bit of a feel-good gem to balance things out.
not me about to run to recommend silo and shrinking after reading "while i've got apple tv", FINE, i strongly recommend bad monkey which is surprising for me who does not like vince vaughn
The great thing about Apple TV is there is so little new content on it, all it needs is a free trial to suck it dry. We've just done Silo S2 and waiting for Severance 2 to ferment so we can binge.
The Tom Hanks movies are worth a look, if you've not watched them yet. Enjoyed Bad Monkey.
The one thing missing from replies so far (I think) is Hijack! Elba being magnificent. It’s particularly good as an occasional palette cleanser from Silo which I find quite full on dark…
Definitely not Foundation. I'm a teenage Asimov fan, so I basically have to watch it, but it's Garbage. For All Mankind is at least moreish and fascinating to analyse
I've enjoyed:
The Afterparty (esp. season 1); Central Park (in the Bob's Burgers family of shows); Criminal Record; Lessons in Chemistry; Loot; The Morning Show (uneven but some good stuff); Palm Royale Platonic, Schmigadoon!, Shrinking, Silo, and Truth Be Told.
For All Mankind should be top of the list, imo. Best Apple thing. Silo is also very good. Foundation sometimes great, a bit rocky in places but always gorgeous to look at; you always know that the money ended up on screen in that show.

Working thru for all mankind - it's good and alt timeline future is fun
Slow Horses for great British satire and insults.
Silo never again reaches the heights of its pilot episode. For All Mankind felt like midcentury cosplay.
Ted Lasso is a nice, fun show that is a positive light, could be nice right now.
I enjoyed Lessons in Chemistry, set in the ~1960s, about a single mother and scientist facing sexism and discrimination in the workplace.
The Tom Hanks movies are worth a look, if you've not watched them yet. Enjoyed Bad Monkey.
Greyhound is OK
The Essex Serpent is just some of the best weird England vibes.
Also the Tetris movie is a fun watch for an evening
