I overcooked them and they were a bit charged. So then I made a mix of Greek yogurt, feta, scallions, lemon zest and salt and pepper. And then added the chopped up zucchini. I also seasoned it with some oregano and mint.

I didn’t cook this. I enjoyed it at a restaurant called Cafe des artistes www.cafedesartistes.com. My cooking is more rustic even though I worked in fine dining for many years.
