It’s a blend of AP flour and semolina, dusted with additional semolina and I also add some flaked salt. It’s hearty but not overly so, reminiscent of artisan Italian breads.

www.jennycancook.com/recipes/fast... I use 1/3 cup of semolina instead of flour and then when I turn it, I fold in another 1/4 cup. Finally I dusted with semolina before I bake it.

I miss living in New York for great Hamantaschen and these in SF look amazing too. Sadly now living in places that don’t even know what it is. 😕
