I was telling you I was an adventurous foodie and therefore had enough space in my taste arsenal to enjoy multiple preparations of several kinds of foods—in this case, pizza and wings. Thanks for hoping I enjoy my baked wings. I always do.

Listen, I’m from Chicago. And I get dying hard on a hill for the way you do a food. And I have no interest in arguing that these are authentic “Buffalo” wings. That is your fight, not mine. But I’ve had Buffalo wings. And the baked wings taste better.

No. It doesn’t. These wings are tender. They also have caramelized buttery sauce. I would never eat another fried wing again.

Don’t knock it until you’ve tried it is all I’m saying. I have had fried wings tossed with sauce in a metal bowl. This is not trying to be that. It’s so much better.

Using tongs, dip the wings and replace them onto the glass pans. Put them back in the oven for another hour, basting them again with the sauce at the halfway point. Remove from the oven when the extra Sauce has caramelized on the pans. You’ll thank me later.

Go to your local grocery store, buy a frozen bag of non-battered, bone in wings. Put them in GLASS baking pans for about an hour until they’re cooked mostly. Pour any liquid out. In the meantime, heat a couple of cups of Frank’s red hot and 3 tbsp of butter in a saucepan. 1/
