You might like this book. It makes it sound like AI is an interesting combination of relatively straightforward math (linear algebra, eigenvalues/vectors, …), immense dimensionality, and not well understood heuristic rules that work surprisingly well especially at large scale for unknown reasons.

I participated in the ALMA construction project. I remember looking at the VLBI-like resolution of ALMA at high(ish) frequencies in extended configurations and wondering in the real world whether anyone would be able to take advantage of it for anything other than point sources.
