Price of eggs and bird flu means substitutes for eggs in baking. My partner cannot have eggs, so I have experimented. 1/4 cup applesauce = 1 egg This works great in pancakes and cookies. 1 T chia seeds mixed with 3 T warm water = 1 egg If recipe calls for 2 eggs, sometimes I used one of each.
