2. I grew up a theatre kid, so I have an easier time than most here, but again, don't be afraid to tell the players you are caught off guard and need a bit.
Remember for NPCs as long as you know what their goals are, you know how they will most likely react.

1. I had this fear for a long time too, it is hard to shake. Ask ypu players what they want and have them help plan their parts of the adventure. I recommend a few pre-made short adventures on hand to help fill gaps for you. It is a bit of a self-promo, but check out AAWgames mini dungeon tomes.

It is really easy to feel like the players broke "your story" with their decisions. They didn't break your story. They just told their half.
If you need a minute to plan after those moments, take it and be proud of the players for being inventive.

Tbf speed is only the change in relative distance between two objects. To a car, the other side of the road goes twice the speed limit, and cars on the same side are roughly staying still.
