They say they could produce at $5/lb at commercial scale today. Great to see at least one food manufacturer is convinced, but the best way to prove this is to show us the data!

It would be great to see this tested in real-world pilot-scale processes for different cell lines!

The study found limited animal cell toxicity at effective doses, low recurrence of resistance, & the peptides can be easily digested (i.e., food-safe) if residues are left on final products. Further optimization will be required, but initial data looks highly promising.

That study uses scenarios that do not reflect actual practices in the field. We wrote a letter addressing the many problems with it 2 years ago, which will be updated with new information now that the study was finally accepted into a journal

Yes, each company's product is evaluated by regulators on a case-by-case basis & the product is tied to the cell line.
If a different cell line is used for a new product, it requires a new safety evaluation
Cultivated meat products will have very high traceability compared to conventional meat
