Used to have a manager who would drink the water from the big cans of corn we'd use for food service. Straight up would just open the can on both sides, get one of those plastic red coca cola glasses, and would drink it straight up. Weirdest shit I remember from that job

You can grate some, get the excess water out, and freeze some, you can make carrot cake, you can add shredded carrot to stews and curries! 😋 hope this helps
