I slice them up and bake them: either with butter, garlic, and onions, or with butter, cinnamon, and ginger. (No measurement, just whatever makes you go, "Hm, looks good.")

-Soup. Cook with onion and ginger in veg stock till mush. Blend, strain, season.
-Halwa. Grate some, cook gently in butter till tender. Add cardamom and sweetened condensed milk.
-Slice thin for stir-fry / quick pickling.
-Cook till mush, then mash. Add to other mashes.

Also if you have good balsamic vinegar, have butter sauteed carrots and add some balsamic and that's actually really good.
But important to have a balsamic that's not super acidic else its gonna overpower the taste
