How do you go from the first image (Unreal) to the others (Planet Coaster, Cities Skyline)? I'll try to give good answers using only visual examples and without delving into the math behind it.

There is surprisingly little information on using splines to make tools for building curved roads, roller coasters, or in my case ski runs, that are simple and intuitive. There's a huge gap between how they are used for full flexibility in editor viewports and what we can do for player interfaces.
