Ive not eaten butter in over 5 years and feel much healthier for it. I use olive oil in it's place. I eat cakes that are made from butter 😜

Beautiful sourdough loaf. When you say autolyse for 12 hours, is it the traditional flour and water or do you mean something else? How does the dough feel after that long?

I use ALFRED it's a Mac productivity app that keeps clipboard history. I'm using the paid powerpack version. A one time purchase (no subscription) and free lifetime updates. It has a lot fo really cool features www.alfredapp.com/powerpack/. There is a free version but without the clipboard history.
