Some more I did in fact forget about in no particular order:
BG3, Guild Wars 2, Hades, Mount and Blade, Total War, Outlast 1&2, Resident Evil, Vampire Survivors, Valheim, Enshrouded, and probably still more. The list of genres I don't vibe with is pretty short.

If modding is an option, there's plenty of community-made overhauls that bridge the gap in "modern-ness" between Skyrim and Oblivion (or Morrowind). There's a nifty tool called Wabbajack that essentially simplifies installing mods to a single click process. Worth checking out 👍
