I think I ‘grew up on’ my Mama’s version of this! She was very creative when it came to finding ways to cook beef since we raised a butcher steer every year. Chicken was a big treat and only for special occasions; fried fish and hush puppies were a welcome change when we got lucky at the river.

I recently used Beyond meat in hamburger helper and it was…unfortunate.

My advice to myself is to brown it, set it aside, and add it at the very end of any given recipe. I haven’t tried that yet, but it has to be better than what transpired in my kitchen.

She did something that I’m guessing she brought with her from the Midwest: Added green beans to it. Unfortunately, canned green beans. Sometimes, instead of elbow macaroni in it, she’d put mashed potatoes on top and bake it.
