I’m onboard with that. Love that hot mustard and hoard it when I get the little cups from the Chinese takeout place. Makes and awesome vinaigrette to put on broiled fish. No science behind it but I think it is a really strong emulsifier. Bet it would pull aioli together well.
The dry powdered hot mustard is far superior to the packets in my opinion. Look for the little tins at a local import foods market. Mix some with a little water before emulsifying into the sauce.
This is rad. I could see going all the way with this. Instead of like bratwurst and sauerkraut with senf pretzel balls, you could stuff them with charsiu, suancai and hot mustard
