Made a pizza bianca with potatoes and am wolfing down a slice now. Not my best version of this, but it'll definitely do under the circumstances AND the prep kept me offline for a wee bit.
Trader Joe's beefless bulgogi with roasted cauliflower and green beans, but leaning in to classic comfort foods like grilled cheese/tomato soup may be the move.

I got store bought pizza dough, cover it with ground beef and onions or ground impossible meat, make a sauce with ketchup, mayo, mustard, add pickles, tons of cheese, roll it up and bake till it’s dark brown. Slice and enjoy!
I have been eating out of a casserole of leftover enchiladas. They are very good enchiladas, but I am going to switch to a different leftover for dinner.
I have chocolate covered marshmallows at home. So far it was chicken nuggies, a gogurt and a cheese stick today. I'm eating like a toddler and that's okay.
Had yogurt and mixed nuts for breakfast, leftovers for lunch, and it'll be homecooked salmon pasta for dinner. Hope you find something to open your appetite soon!

I like nishiki short grain personally, v tasty and I like a semi-sticky texture
