I want a game that's third person action, not ridiculously challenging but feels good to play and can keep my attention. Single player. Darksiders/dragons dogma/nier remake levels of feeling good but not pushing me too much due to my doctor telling me not to do anything too stressful

It might be a bit too easy by the metrics of the games you listed but I thought it was a cute, sweet and fun time. Lots of neat little gameplay details, like the guards vocally pretending to be dead after you've vanquished them! 😀
I've netted 61 hours in it. For a 80's themed roguelike it's fun and rewarding to do over, and lots of neat mutations that seamlesly work together!

I'm surprised it doesn't scratch a technical itch for you; I love the combination of weak points, part-specific loot (likewise expanded in HFW), and elemental effects.
Monster Hunter World/Wilds?
Pretty sure you could emulate Die Hard Arcade for free and scratch that itch. Won’t keep you occipital for very long though.
Otherwise i would say god hand but that one stresses me out so out the window it goes.
