I've seen cheese you people wouldn't believe. Camembert baked off (the) shoulder of Orion. I watched a rather nice ripe Brie glitter in the dark near the Tannhäuser Gate. All those moments will be lost in time, like tears in rain.

I remember doing charcuterie on a smaller scale with pitted olives and a Greek Cypriot friend said angrily “how could you? the flavor is best near the olive pit!”
(Lilith Spencer would be my influencer of choice, if I were going into this — their aesthetic choices are really clear and there's an overall composition, not just a dense mosaic effect.)
