🧵 It’s Sunday morning, and eggs are still expensive, so here’s a pro baking tip:
You can replace eggs with baking soda & vinegar. This works really well for pancakes (and even cakes, muffins, and quick breads).

🥄 1 tablespoon vinegar (white or apple cider)
🥄 1 teaspoon baking soda
(Do not mix them together first - remember in sixth grade science when you made volcanos? We don’t want that.)
Mix the vinegar with your wet ingredients and the baking soda with your dry. (🧵 2/4)
When baking soda (a base) mixes with vinegar (an acid), they react to form carbon dioxide gas. This creates air bubbles, making baked goods rise—mimicking the leavening effect of eggs.
Leavening = the process that makes baked goods rise. (🧵3/4)

Combine one tablespoon of flaxseed meal and three tablespoons of water and allow to sit for about 5 minutes.

Equal to one egg: 1/4 c. mashed banana, 1/4 c. plain yogurt, 1/4 c. applesauce, 1/4 c. silken tofu, 1 T. flax meal mixed with 3T. water (let stand 5 minutes before using, 1/4 c. buttermilk. Bob's Red Mill sells an egg substitute, too
How do they taste scrambled?
😁
It doesn’t add a strong flavor. When heated, baking powder releases carbon dioxide bubbles causing rising. The result is a fluffy, delicious baked goods.
Make a paste of vinegar and baking soda and rub it in with a polishing motion. Rinse.
Thank me later.
The baking soda is composed of hard crystals that act as an abrasive.
However, it's still *saddening* to actually see one.
Though you did mention structure - would there be any situations were something like unflavored gelatin could be substituted? (Admittedly, I'm somewhat grasping at straws here...)
Now vinegar and baking soda equals an egg. We are so fucked. Also, thanks for hack.
1 tablespoon Chia Seeds and 2.5 tablespoons water.

Many answers in the main thread are reflected on other sites, of course. I did find this website with a number of options, descriptions, and specific egg replacer brands. Hope it helps!

so good -
Plain with whatever.
As a vegan, I use different egg replacements all the time.
Folks should look up all the alternatives. We don't need eggs to live a healthy life.
Used it in recipes that called for eggs for lenevening.
Thanks.
highly recommend looking at vegan recipes cuz certain substitutes work better depending on the goal - like aquafava is great for veg meatballs (& I’m sure not veg as well)
No milk, butter or eggs needed.
1 lb (450g) potatoes, peeled.
2 tablespoons butter.
1 cup (120g) all-purpose flour (plus extra for rolling).
1 teaspoon baking powder.
1/2 teaspoon salt.
Freshly ground black pepper (optional).
Milk (about 2-3 tablespoons).
1 egg (optional, for brushing).
Peel and chop the potatoes into small pieces, then place them in a pot of salted water.
Boil the potatoes until tender (about 10-15 minutes). Drain them well.
Sift the flour and baking powder into a large bowl.
Add the mashed potatoes to the flour mixture.
Mix everything together until it forms a dough.
Turn the dough out onto a floured surface. Roll it out to about 1/2 inch thick.
Cut the dough into circles (using a cookie cutter or a glass) or cut it into triangles if you prefer wedges.
Place the scones on the hot griddle and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
Serve warm with butter, jam, or your favourite spread. Or the best way, fry an egg to sit on top. Enjoy your Tattie Scones.😘

People flip out when I tell them my stuff is vegan
I substitute plant butter for butter, and plant milk for milk.
