The economic fudging is something I do not understand. Even if he fakes the numbers, people will know they can’t afford groceries, are losing their jobs, and experiencing other severe economic hardships. What’s the use of the government telling them everything is fine?

Whether his administration will cook the books isn't even a question. It absolutely will, and he won't even have to give the order. His appointees will know their loyalty will be judged by how far they go to protect him. If they're caught, they, not him, will pay the price.

Serious questions: are there private inflation data sources available to the public? And is such data available to institutions? Also I just wanted to make the point that this type of manipulation will occur throughout the government - climate data, infectious diseases, crime, immigration

No, or more correctly not much. There are few things new under the Sun and there is a safer path. Fudging numbers come with the element of risk. Right Wing reactionary governments tend to just not collect or not publish the numbers. See Florida or Alberta.
Those "business leaders" manipulate their earnings and shares with pump-and-dumps to manipulate the market, and sucker banks into loaning them money. They aren't sticklers for accuracy either, as long as they get paid.
