Since you enjoyed 17776, I’d recommend Mike Duncan’s new project on his Revolutions podcast. It’s the recounting of a Martian revolution in the 23rd century presented like a podcast talking about actual historical revolutions.
Miles In Transit is just a bunch of college friends who are super passionate about public transportation and Amtrak and weird different public transit route. I reminds me a lot of early YouTube when the focus was on having fun and making silly videos about a thing you like and not numbers.
i quite enjoy PricklyAlpaca! she's a mixed media artist who does all sorts of fun fantasy projects like making puppet dragons and sewing fancy halloween outfits. her commentary is v funny and interesting. i esp recommend her design challenge videos since character design is her specialty!
Not a YouTuber, but you would probably a reality tv show from a few years ago called "Work of Art". It was produced by Sarah Jessica Parker and run for two seasons

I love Jun's Kitchen! The aesthetics and the foods and the adorable cats... it's just such a lovely gentle channel, and lately it features a lot of interesting small Japanese candy makers!
