For pans, cast iron is great. But after 45 years I have mostly migrated to carbon steel. They’re mostly equal, but carbon is lighter and the pan shapes are better
It’s not perfect, but it’s the best I’ve used so far.
Literally.
For everything.
Including grilled cheese.
