We swear by Delia. @mikereynolds08.bsky.social does the chopping and I cook. Sometimes make 3 fruit (orange, lemon and lime) instead of plain sevilles.

I think you qualify for the marmalade SP and list I made. All mine have wild lemon in them for extra citrus and added pectin. (I've made 54 jars in the last week 😀)

My grandfather used to get Seville oranges and make marmalade every year. I still have a jar of his last batch in my refrigerator. I don’t think I will ever open it.
I should make some though, in his honor. Thanks for the reminder!

So Fiona boils the whole oranges first? Interesting. I juice them first then put the juice, pith and pips in muslin and let it drip overnight

That’s a classic method, for good reason. I like Fiona’s (actually her mum’s) technique, find the cooked, whole Sevilles easier to finely slice than when raw.

We made four batches this year. It has become a tradition. Three using my partner’s pressure cooker and one, out of necessity, in my slow cooker, which is much darker. Yours is a wonderful colour.

Best advice to any newbies is to buy a thermometer. Saves all that faffing around with chilled saucers and blowing to see if it wrinkles. When it reaches the right temperature it will set. Simple.

Never made it! As it happens I’m about to cook a few clementines to make Clementine almond cake for a pal’s birthday. I imagine if you make marmalade with them you’d need to add a fair amount of lemon juice to balance out the sweetness?

Anytime. I’m no expert, but I love the enthusiasm for marmalade making at this time of year, if I have time in the coming weeks I may try a few small batches of other citrus 💁‍♀️

Eons ago, I used to make tangerine marmalade. So good. Less bitter and easy to make. Clementines would work well the same way. I used an old Cordon Bleu recipe.

My mum’s recipe is very similar to Fi’s and I have Sevilles in the freezer! Mum also put one normal orange in each batch. Liking the sieve method instead of muslin so I might try that.

Sweet! I cooked the oranges last night and hoping to do all the slicing at lunchtime before cooking the final marmalade this evening. Really like doing it in stages over the course of a day or two, so much more manageable 💁‍♀️

I make an excellent marmalade by mincing the peel rather than chopping or slicing. You use less water, cook it for much less time, so the flavour is sharper and the colour brighter, and I love the texture (I appreciate some don't).

Just Seville. Don’t even use lemon. But I think this year I shall experiment with different sugar.
